About Us

HeartBeet Organic Superfoods Café is a casual quick-serve superfoods restaurant that was started in 2008 (originally under the name "Thrive") by a local Seattleite named Monica Colgan. Monica started the restaurant after her mother, Karen, was diagnosed with lung cancer in 2004. After spending some time at Hippocrates Health Institute in West Palm Beach, Florida, she became inspired by seeing the healing that is possible when you eat mostly raw foods. So, Monica dreamed of creating a magical place in her hometown, Seattle -- a place with vegetables so good, people would get in line to eat them -- and with a lot of hard work and the support of the community, it became so.
