About Us
Founded in 2010, Firefly Kitchens makes organic fermented vegetables, including different varieties of sauerkrauts and fermented carrots. We cultivate our living foods using a wild fermentation process and never add sugar, vinegar or heat to our products. Our goal is to make these delicious, gut-nourishing foods and inspire people to make them a part of everyday meals.

- School Specific Wholesale Product Details: All of the produce we use to make our ferments is cleaned and processed by hand. We use a commercial grade food processor to shred the vegetables. Yin Yang Carrots: Julienned carrots fermented with fresh and dried ginger. We ferment these for 4 weeks and then refrigerate the final product. Classic Sauerkraut: Shredded green cabbage fermented for 4 weeks and then refrigerated. Emerald City Kraut: Shredded green cabbage, shredded kale, dried turmeric, dill, coriander and red chili pepper flakes, mixed and fermented for 4 weeks and then refrigerated. Ruby Red Sauerkraut: Shredded green cabbage, julienned carrots and beets and diced green onions fermented for 4 weeks and then refrigerated. Caraway Sauerkraut: Shredded green cabbage and caraway seeds fermented for 4 weeks and then refrigerated.
