About Us

Evolve Cafe and Chocolate has its home above Village Books, one of the largest independent bookstores in Washington. The cafe is renowned as a source for local and sustainable food and products, all while overlooking beautiful Bellingham. The dishes are served on Bellingham-made pottery. Their organic coffee is sourced from a local family who has been their supplier since day one. The tables where patrons laugh and dine are upcycled Douglas fir from a 100-year-old Fairhaven house roof. Everything in the cafe has a story, from the food to the “writers corner” to the green living wall that infuses the air with extra oxygen.

All menus are created by executive chef, co-owner Christy Fox and inspired by her wife Shannon’s musings. They’re a combination of customers’ desire and what’s fresh, local, and in season. To enhance the dining experience, Evolve offers a selection of regional wines along with curated wines and from around the world, a rotating list of craft beers, a list of house infused cocktails, and spiked hot chocolates and toddys.
